  • 250 g 00 flour
  • 250 g sugar
  • 5 yolks
  • 1 egg white
  • Salt 
  • 1 sachet of vanillin or other flavourings as desired

First whip the egg whites until stiff.

Separately, mix the egg yolks with the sugar, flour, salt and vanillin in a large bowl.

Add the beaten egg whites and knead until the mixture is smooth and lump-free.

Transfer the mixture to a floured cutting board and knead with your hands for a few moments to mix everything together. If it is too hard, help yourself by adding a drop of water.

Divide the dough into 10-12 portions and make them into s-shaped or doughnut shapes. 

Spread the biscuits on a baking tray lined with baking paper and bake in a preheated oven at 170°C for 15 minutes, taking care not to brown them too much.

When cooked, remove the biscuits from the oven and leave to cool before serving.
