Description
The Consortium for the Protection of Prosciutto Veneto Berico-Euganeo was established in Montagnana on 10 June 1971 among producers operating in the plain between the Berici Hills and the Euganean Hills, with the aim of protecting the origin and quality of the product, Prosciutto, which is still processed here according to ancient customs and traditions.
In 1996, the European Union awarded Veneto Ham the D.O.P. Protected Designation of Origin, a mark guaranteeing the very close link between production and its territory, 15 municipalities located between the Berici and Euganean Hills, with Montagnana being the most renowned centre and headquarters of the Consortium. Today, the ham that complies with the specifications is branded with the Lion of St. Mark and the words 'VENETO', not before 12 months of ageing, which can become even 19-20. A long wait for the ham to acquire all its fragrance, its rosy colour and its extraordinary sweetness.
Seasonality
Overall, the seasoning of Prosciutto Veneto Berico-Euganeo PDO lasts at least 16 months. Each ham factory can increase the seasoning time. For example, the Salumificio Brianza ages its hams for up to 18 months
